First Dweji Gukbap~ Busan Wang Dweji Gukbap. 첫 돼지국밥~ 24시 부산 왕돼지국밥

My first Dwe-ji Guk-bap 돼지국밥 in Busan. No need to go far as there's one opposite the road from his house. This Busan Wang Dweji Gukbap is a chain restaurant operate 24 hour 7 days a week. It has many branches across the nation. Dweji Guknbap is pork soup served in hot stone pot with thinly sliced pork meat, served with rice and side dishes. The local way of eating gukbap is seasoned the broth with salted shrimp paste, then add in rice and chives into the broth and eat the rice soup with kimchi and kkakdugi (diced radish kimchi). It also can be eaten with guksu (noodle) too. Side dishes are refillable at self-service corner. The chili peppers and onion slices can be dipping with ssamjang (seasoned soybean paste) before eat.

I was told that to make the savoury broth for Dweji-gukbap, pork bones are boiled down three times in order to make the soup broth. First time boiled water will be discard. Second batch boiled water only half of it will be retained and mixed with third time boiled water. That's where the white-coloured broth created after these process. Don't miss this Busan delicacy when you visit Busan.
