Tofu with Stir Fried Kimchi & Pork~ Dubu Kimchi 두부 김치

As hubby always reach home during supper hour. Dubu kimchi is the dish I would normally make for him if he not yet have his dinner. It;s not so heavy for a supper meal. Also it can be ready quickly and less oily in the kitchen. Dubu kimchi is a dish where you place the stir-fried kimchi and meat on a tofu slices and eat together in one bite. The meat can be either pork or chicken - normally pork belly or chicken drumstick meat is use in this dish. Dubu kimchi is also a popular anju (food that suitable for drinking).


Ingredients (2 servings):
 
1 package tofu (400 grams)
1 cup of Chopped Kimchi
1/2 onion
1-2 bunch green onions
100 grams sliced pork

1 teaspoon minced ginger
1 tablespoon minced garlic
1 teaspoon of cooking wine
1 tablespoon soy sauce
1 tablespoon sugar
1 tablespoon sesame oil
1 tablespoon hot pepper powder (gochugaru)
2 pinches of pepper
Some sesame seeds for garnish


How to Cook:

Step 1
Get ready the ingredient for cooking:- Cut the onion into thin slices, chop the green onions into ½ inch pieces, minced the ginger and garlic, thinly slice the meat, 1 cup of chopped kimchi and a pack of pressed tofu.


Step 2
In a large bowl, combine the pork slices, 1 teaspoon minced ginger, 1 tablespoon minced garlic, 1 tablespoon soy sauce, 1 tablespoon sugar, 1 tablespoon sesame oil, 1 teaspoon of cooking wine, 1 tablespoon hot pepper powder (gochugaru), 2 pinches of pepper. Mixed all ingredient well. Cover it with a cling wrap and let it marinate at least 15 minutes by placing it inside the fridge.


Step 3
Meanwhile, obtain a pack of tofu, pour 4 cups of water in a medium size pot and bring it to boil, add in the whole tofu gently and boil it for 1 minute by using a strainer. Remove the tofu from the boiling water and set aside and let it cold down before you can cut into slices. Malaysia Tofu is kind of soft and not as firm as Korean Tofu, so you need to handle it gently to prevent the tofu tear or crush. 


Step 4
Heat up the oil and stir fried it with some chopped green onion to add flavour to the oil. Then add the chopped kimchi into the pan and stir-fry for 5 minutes on a medium heat until the kimchi is slightly golden brown. Liquid will generated from the kimchi during stir-fried process.


Step 5
Move the kimchi to one side of the pan, add in the marinated meat on the other side and continue to cook both on medium heat for another 5 minutes. Cook until the pork is cooked through, and most of the liquid generated earlier from kimchi is evaporated. the mix both well. 


Step 6
Add in the onion slices, cook for 1-2 minutes until all mixed well. Then add in green onion and cook for another 30 seconds and it is done. I am using red onion here since I dont have yellow onion. Any onion is ok, it doesn't affect the taste in overall. 


Step 7 
Slice the tofu into ¼ inch slices and place it on both size of the plate, and place the stir-fried kimchi and pork in the middle and dubu kimchi is ready to serve. You can eat it just like that~ one piece of tofu with a spoonful of stir fried meat and veggie, or with ssam (Korean veggie wrap) just like what we did sometimes.
