I often make Dubu Kimchi as supper as it is not so "heavy" compare to having spicy stir fried pork with rice. Also it can be ready quickly and less oily for my kitchen. You can eat it with one piece of tofu top with some stir fried kimchi and meat; or make "ssam" by wrap it with lettuce and perilla leaf band eat. The meat can be either pork or chicken - normally pork belly or chicken drumstick meat is use in this dish. Dubu kimchi is also a popular anju (anju is food that serve along when drinking). **I've updated this post with new photos taken when I made Dubu Kimchi again in 2024**
Ingredients (2 servings):
1 package Korean tofu (300 grams)
1 cup of Chopped Kimchi
1/2 onion
1-2 bunch green onions
200 grams sliced pork
1 teaspoon minced ginger
1 tablespoon minced garlic
1 teaspoon of cooking wine
1 tablespoon soy sauce
1 tablespoon sugar
1 tablespoon sesame oil
1 tablespoon hot pepper powder (gochugaru)
2 pinches of pepper
Some sesame seeds for garnish
Step 1
Get ready the ingredient for cooking:- 1 cup of chopped kimchi, 1 pack of firm tofu, thinly slice the onion, cut the green onions finger length and some chopped in 1/2 inches pieces, chopped the chili pepper, minced the ginger and garlic and slice the meat in desire size.
Step 2
In a large bowl, combine the pork slices, 1 teaspoon minced ginger, 1 tablespoon minced garlic, 1 tablespoon soy sauce, 1 tablespoon sugar, 1 tablespoon sesame oil, 1 teaspoon of cooking wine, 1 tablespoon hot pepper powder (gochugaru), 2 pinches of pepper. Mixed all ingredient well. Cover it and let it marinate at least 15 minutes by placing it inside the fridge.
Step 3
Meanwhile, obtain a pack of tofu, pour enough water to submerge the tofu block in medium size pot and bring it to boil. Boil it for 1 minute by using a strainer. Remove the tofu from the boiling water and set aside and let it cold down before cut into slices. If you are using Malaysia made pressed Tofu - it is kind of soft and not as firm as Korean Tofu, so you need to handle it gently to prevent the tofu tear or crush.
Step 4
Heat up the oil and stir fried it with some chopped green onion to add flavour to the oil. Then add the chopped kimchi into the pan and stir-fry for 5 minutes on a medium heat until the kimchi is slightly golden brown.
Step 5
Move the kimchi to one side of the pan, add in the marinated meat on the other side and continue to cook both on medium heat for another 5 minutes. Cook until the pork is cooked through, mix both kimchi and meat together.
Step 6
Add in the onion slices and green onion, cook for 1-2 minutes until soften. Add in the chopped green onion and chili pepper and cook for another 30 seconds and it is done.
Step 7
Slice the tofu into desire slices and place it on both size of the plate, and place the stir-fried kimchi and pork in the middle and Dubu Kimchi is ready to serve. You may sprinkle some sesame seeds as garnish if you have it.
