September 2022. I used to make Japanese Curry Rice with the Korean brand Japanese curry powder in the past. Lately I have changed it to this Japanese curry cube after watched a cooking video from Korean Youtuber as it is so convenient! Same like the Ottogi Japanese curry powder, this Vermont brand Japanese curry cube also have 3 levels of spiciness - Hot, Medium and Mild. I normally get the HOT one but honestly I can't taste the spicy at all. So usually I will level up the spiciness with black pepper. The Japanese curry cube is meant for 12 servings with 12 cubes inside. Normally I will prepare 6 servings in once for 2 to 3 meals as husband loves curry and he would eat 1.5 serving per meal. Also, the curry taste even better and richer after keep in fridge overnight.
Ingredients :
2 Medium size Onions
2 Medium size Potatoes
2 Medium size Carrots
1 Medium size Broccoli
350gram Pork Belly
6 cube of Japanese Roux Curry
Black pepper powder (to add spiciness)
How to cook:
First of all, cook rice. Then cut the onions, potatoes, carrots and broccoli into bite sizes. parboil the pork belly and set aside.
Step 2
Add 1 tablespoon of oil, stir fry the onions on medium fire until it is turn brown and soft. Stir fried onion will add caramelized flavour to the curry. Add in the potatoes and carrots cubes and continue to stir fry for about 2-3 minute till it is lightly cook. Lightly stir fried the potatoes and carrots can prevent it turn over soft during the stewing process.
Add in about 4 cups of water (about 1,000ml) or enough of water to submerge the veggies and parboiled pork belly. Bring it to boil on high heat.
Step 4
Once it is boiling, add in the curry cube and let it boil for a few minutes until the curry cube melt, stir well until it turn into curry stew.
Step 5.
Lower the fire to medium heat and let it continue boil for 10 minutes with cover until the curry stew become sticky. Add few dash of black pepper if you prefer your curry a little bit spicy.
After boil for 10 minutes, remove the cover and add in broccoli and continue to boil for another 5 minutes with cover then it is done.
Serve the curry with the cooked rice and you may enjoy your meal!
